Our Philosophy
At Kappo Miyabi, the evening is shaped by the morning's finest catch from Toyosu, vegetables nurtured by contract farmers across Japan, and a carefully chosen selection of regional sake. Each night in Ginza unfolds through the hands of our chef — a lifetime of discipline distilled into a single seasonal course.
We work directly with trusted wholesalers at Toyosu Market. Only the finest of each day's catch makes it to your table.
Our ichiban-dashi is drawn from true Rishiri kombu and the finest katsuobushi. The soul of Japanese cuisine, honoured in every bowl.
