Our Philosophy

The forest and the land
grace our table.

Nestled in the deep forests of Karuizawa, Ristorante Bosco pursues a vision of "forest Italian cuisine" — bringing together ingredients sourced directly from producers across Italy with the seasonal vegetables, mushrooms, and mountain vegetables that Shinshu's four seasons provide.

Direct-Sourced Ingredients Olive oil from Tuscany, prosciutto from Parma, and mushrooms and highland vegetables from Shinshu — all sourced directly from our trusted producers.

Terroir of the Forest We express the changing nature of Shinshu on every plate — mountain vegetables in spring, tomatoes in summer, porcini in autumn, truffle in winter.
